Chicken and Cider Stew

Super quick to prepare- and soooooo delicious. I highly recommend this. All you need is

  • about 1kg of chicken thighs and drumsticks- skinned
  • some oil for frying plus a knob of butter- this helps the chicken brown faster and improves flavor of the sauce
  • 2 medium or 1 large onion
  • 1 teaspoon dried thyme or a few sprigs of fresh thyme
  • 400ml apple cider
  • 1 table spoon plain flour

then you just brown your chicken in the old and butter, set aside and then fry the onion until soft and translucent. Add thyme and bring back the chicken into pan. Pour in the cider then bring back to boil. Reduce heat and simmer for about 45 minutes. Mix the flour with a little water to form a paste and add to the stew. Let it cool for another 5 or so minutes. I love serving this with mash. Enjoy xxx

PS- you can add double cream instead of flour, but if you’re watching the calories please stick to the flour 🙂

  1. I made this yesterday and it was very easy and delicious. I couldn’t find apple cider, but I replaced it with non pasteurized apple juice (looked and tasted like apple cider). Will make this again. Thanks Fiso.
