Potatoes in Tomato sauce

This is another childhood favourite of mine. So easy to make and I remember growing up we used to serve it at breakfast,lunch or supper. That is just how versatile it is. I served it with boiled eggs and avocado and rocket salad.
Prep Time: 10 minutes
Cook time: 20 minutes
Ingredients:
Potatoes – 450g
Water –
Salt and Pepper –
Onion, finely chopped – 1
Garlic,minced – 1 clove
Tomatoes – 200g
Mixed dried herbs – 1 tsp
Instructions:
I personally do not peel my potatoes, but if you wish to, peel and cut in roughly 2.5cm chunks. Pour enough water to just cover the potatoes and cook for about 10 minutes.
In the meantime fry the onion until softened. Add garlic and fry for another couple of minutes
Add tomatoes and let them cook through for about 5 minutes. Add herbs and season to taste
Add the cooked potatoes together with the water they cooked in and mixed herbs. Leave to simmer on a low heat for.
*Tip: if you like a thick sauce crush 1 or 2 potatoes using the back of a spoon
