Brocolli Pasta Bake

This is one of my kids favourite. No only is it budget friendly, it is so quick to make. My kids and hubby like a lot of sauce in theirs, you can reduce it to your taste. To serve 4-5 you need:
300g pasta (I use penne or macaroni for this)
Brocolli- however much you like
80g butter, cubed
80g plain flour
800ml milk
Generous handful of Cheddar cheese grated- say maybe a cup. Again you can play around with this. I use less if its mature cheese. TIP- if you are watching calories, try mixing parmesan and a small amount of mature cheddar. Its strong so you need far less to get the flavour through
Pinch nutmeg and a pinch of mustard powder (optional, they just enhance cheese flavour so do not worry if you do not have these)
  • In a large saucepan cook pasta for 5 minutes less than it says on packet. Add brocolli florets to pasta and carry on cooking for a further 2 minutes or so. Yo do not want to cook these fully as they will carry on cooking when you bake them. Drain and set aside
  • While pasta is cooking you can start on your sauce. There are many fancy methods of making white sauce, but I just throw in the butter, flour and milk in a small saucepan. Stir continuosly using a whisk until you get a thick smooth sauce
  • Season and take off the heat. Add about 3/4 of the cheese to the sauce. Stir well. 
  • Place Pasta and Brocolli into an oven proof dish, then pour sauce over. Give it a getntle mix to evenly distibute the sauce. Scatter reserve cheese on top
  • Bake in for about 10 minutes at 180C fan/ 200C conventional until top is lightly browned
