Easter- Hot cross buns

Here is my recipe for hot cross buns. Hope you enjoy it, and have the most fantastic blessed Easter

1 teaspoon fast action yeast
450g Strong bread flour
2 tablespoons sugar
50g butter (melted if you are mixing by hand)
1 teaspoon salt
1 teaspoon mixed spice
1/2 teaspoon cinamon
1/4 teaspoon nutmeg (omit if you are not a huge fan of nutmeg)
1 egg
125ml milk
125ml water
150g mixed dried fruit

For the Glaze

  • 2 tablespoons Sugar
  • 2 tablespoons Water

For the Crosses

  • 2 tablespoons flour mixed with about 2 tablespoons water to make a paste

If using bread machine in the order suggested by manufacturer (I have listed in the order I put them in my machine- then proceed to step 7

  1. If making by hand, warm milk and water until hand hot. You do not want it boiling as it will kill the yeast.
  2. Sift Flour, salt nd spices. Mix in yeast, dried fruit and sugar. Make a well in the centre and pour in water, milk butter and egg. Mix with a wooden spoon to begin with then transfer dough on a lightly floured surface and knead until smooth (roughly 15 minutes- really good work out!!!)
  3. When the dough is nice, smooth and elastic you know the gluten is developed
  4. Place the dough in a bowl and cover loosely with cling film or a wet tea towel. This prevents your dough drying up. Leave the dough to rise until it has doubled in size (roughly an hour)
  5. In the mean time, line a large baking sheet with baking parchment
  6. When the dough is ready, lightly flour your work surface and knock the air out
  7. Divide the dough into 12 equal portions (TIP- I use a knife to slice the dough into 2 equal halves, divide each half into 2 (giving 4 equal portions) then divide each quarter further into 3. This results in 12 evenly sized buns)
  8. Arrange the dough on the sheet spaced out evenly
  9. Cover loosely with greased clingfilm and let rise for 30 to 40 minutes
  10. Preheat oven (200 °C Fan/ 220°C Conventional)
  11. In the meantime spoon flour and water paste mixture into a piping bag (you can use a sandwich bag and just snip a small hole in the corner). Pipe crosses on to your buns and bake for about 15 minutes or until golden bron
  12. To make the glaze, mix sugar and water in a microwave safe bowl and heat for 20 seconds in the microwave (alternatively you can do this in a saucepan on the hob)
  13. When the buns are cooked remove from the oven and brush with glaze as soon as they come out of the oven
