Egg and Dairy Free Pancakes

So… I have been missing in action!

5 years ago my whole family and I went vegetarian… then vegan shortly after. I lost my blogging mojo as I was unsure anyone would be interested in plant based food. Turns out I was wrong! I have continued to share bits and pieces on my instagram page and turns out several people are enjoying this new journey.

I have left some old popular non vegan recipes on the blog. I will be “veganising them” too for the benefit of those who follow a plant based lifestyle, have egg and dairy allergies or wish to increase they vegetable intake,

So, being a  Fri-YAY and my middle boy loves his fluffy pancakes every Friday! The look on his face when he comes down for breakfast is priceless!

Egg and dairy free pancakes

EGG and DAIRY Free Pancakes


4 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon white sugar
2 flax eggs (2 tbs ground flax plus 5tbs water)
2 tablespoons vegetable oil
330 ml plant milk (we use soya milk)
225g plain flour (we prefer wholemeal flour)
1 teaspoon oil for frying (you only need it for the first pancake, the rest will fry ok with no extra oil)

1. In a bowl, mix the dry ingredients and make a well. Beat in the wet ingredients
2. Heat lightly oiled pan (with the teaspoon oil) and ladle pancake batter in small quantities (about 4-5 tablespoons per pancake)
3. When the pancake batter starts to bubble it is time to flip onto the other side
