Microwave roasted peanuts

Fuss free, quick and easy nzungu dzakakangwa (roasted peanuts). Fantastic and popular snack in Zimbabwe

You need:

About 1 1/2 cups peanuts
1 teaspoon salt (adjust to taste) dissolved in 3-4 teaspoons water


  • Place peanuts in a dinner plate spread out and microwave on high for 6 minutes stirring halfway through the cooking period
  • While the peanuts are still hot pour over the salted water and mix . The water should evaporate immediately. If you have any trace of water give the nuts a 30 second blast in the microwave
  • Leave to cool and serve or store in an air tight container at room temperature
