Whey Protein Granola Bars

This has become a staple snack in our house.Hope you like it like we do!
You can any dried fruit you like, just add 1 1/2 cups of your favourite fruits
My measuring cups are 250ml
Porridge Oats – 2 cups
Dessicated coconut – 3/4 cup
Wheat Germ or Wheat Bran – 1/2 cup
Sunflower Seeds – 1/2 cup
Butter – 75g
Honey – 1/2 cup
Dark brown sugar – 4 tbs (40g)
Vanilla Extract – 1 tsp
Flax seeds – 1/4 cup
Whey Protein (optional) – 1/4 cup
Dried Cranberries – 1/2 cup
Dried Apricots, chopped – 1/2 cup
Pitted dates, chopped – 1/2 cup
Preheat oven to 160C Conventional/ 140C fan
Roast oats, flaked almonds,wheat germ and coconut for about 10 minutes
In the meantime melt together butter, sugar, vanilla extract and honey in a saucepan over medium heat
Remove toasted oats from oven and place in a large bowl. Toss dried fruit in
Pour in melted butter mixture, and stir till well mixed
Decant mixture onto a lined 22 x 31cm baking tin (I use This Judge swiss roll pan)
Press the mixture down so it is evenly distributed. Bake for 15 to
20 minutes
Remove from oven and leave to cool completely before cutting into bars
Store in an airtight container
